Preheat oven to 425℉.
Prepare a baking sheet by lining it with parchment paper or foil.
Toss the carrots with olive oil on the prepared baking sheet and sprinkle with salt and pepper.
Roast the carrots for 20-25 minutes, until soft and just slightly caramelized around the edges.
Remove the carrots from the oven and sprinkle with thyme. Serve hot. ENJOY
